Ingredients
  

  • 1 package Pizza dough Homemade or store-bought
  • 2 tbsp Olive oil For brushing the crust
  • 8 large Eggs Fresh
  • Kosher salt To taste
  • Fresh ground black pepper To taste
  • 2 tbsp Cool water Helps make eggs fluffy
  • 1.5 tbsp Butter For scrambling the eggs
  • 1 1/4 cups Shredded provolone Freshly grated recommended
  • 1 cup Shredded Pepper Jack cheese Freshly grated recommended
  • 6 slices Bacon Cooked crispy and coarsely chopped
  • 1/2 lb Bulk breakfast sausage Browned in a skillet
  • 1/2 Red pepper Finely diced
  • 3 Green onions Freshly chopped
  • Salsa Optional for serving

Method
 

  1. Preheat your oven to 425°F. Lightly grease a 10x15 inch rimmed baking sheet with non-stick spray or olive oil.
  2. Stretch the pizza dough across the pan. If it resists, let it rest for a minute and try again. Push the edges up slightly to form a border.
  3. Brush the crust with olive oil and prebake for 7 to 8 minutes until slightly puffed and pale golden.
  4. While the crust bakes, whisk eggs with water. Melt butter in a skillet over medium heat and cook eggs until soft and barely set; remove from heat immediately.
  5. Layer the soft eggs over the prebaked crust, followed by provolone, Pepper Jack, bacon, sausage, red peppers, and green onions.
  6. Bake for 10 to 12 minutes until cheese is melted. Broil for 1 to 2 minutes at the end for golden spots, watching closely.

Notes

Prebaking the crust is the secret to avoiding a soggy pizza. For a faster morning, prep the bacon, sausage, and peppers the night before!
