Ingredients
  

Base
  • 6 slices Large bread slices Whole wheat, white, or multi-grain
  • Olive oil or butter As required for toasting
Toppings
  • as needed Pizza sauce
  • 1 medium Onion Finely cubed
  • 1 medium Capsicum Finely cubed (green, red, or yellow)
  • 1 medium Tomato Optional, deseeded and cubed
  • 5-6 pieces Olives Optional, thinly sliced
  • 1 to 1.25 cups Mozzarella or pizza cheese Grated
Seasoning
  • as required Dried oregano
  • as required Dried basil
  • as required Crushed black pepper Optional
  • as required Red chilli flakes Optional

Method
 

  1. Dice onions and capsicum into small, even cubes. If using tomatoes, deseed and cube them. Slice olives thinly.
  2. Heat a heavy skillet on the lowest possible heat setting. Lightly coat with olive oil or butter.
  3. Place bread slices in the pan and toast for about 2 minutes until the bottom is golden and firm.
  4. Flip the bread. Optionally, turn off the flame to assemble.
  5. Spread a thin layer of pizza sauce on the toasted side. Do not press down.
  6. Evenly distribute onions, capsicum, tomatoes, and olives over the sauce.
  7. Sprinkle with oregano, basil, and black pepper. Cover generously with grated cheese.
  8. Turn the heat back to low, cover the pan with a lid, and cook until the cheese is melted and bubbling.
  9. Remove and place on a wire rack for 30 seconds to prevent sogginess. Garnish with chili flakes and serve.

Notes

For an oven version: Preheat to 400°F (200°C) and bake for 8-10 minutes on a parchment-lined tray. Avoid piling toppings in the center of the bread to maintain structural integrity.
